Functional Benefits

1. Quantifiable Antioxidant Capacity

15,000 to 18,000 µmol TE/g of ORAC value (measured by a third party). In contrast to general fruit powders that don't say what they do, this lets supplement makers make exact antioxidant claims.

2. pH-Stable Natural Pigment

Keeps 85% or more of its colour at pH 3.5 for 6 months (rapid test at 40°C). Good for sour drinks that don't have any colouring added to them.

3. Cold-Water Instant Dispersibility

Doesn't need much stirring to dissolve in water at room temperature in 30 seconds. For quick drink mixes, it gets rid of the need for hot preparation or emulsifiers.

4. Low Hygroscopicity

Absorption of less than 3% of moisture at 75% RH for 48 hours. It makes dealing easier in damp places and extends the shelf life of things that don't like water, like effervescent pills.

Application Guidelines

Beverage Systems (Recommended dosage: 0.5-2%)

  • Add sports drinks while it's cooling to keep the anthocyanins whole.
  • When making plant-based milks, add a little water first so that the proteins don't mix.
  • CO2 levels should be checked in small batches by people who make fizzy drinks.

Dietary Supplements (Dosage: 200-500 mg/serving)

  • Direct sealing is used for capsules, and no flow agents are needed.
  • Tablets: Use 5-8% cellulose and a natural adhesive.
  • Gummies: Add between 55°C and 60°C to keep them from breaking down at high temperatures.

Bakery Products (Dosage: 1-3%)

Anthocyanin level may drop by 30 to 40 percent in uses that are heated above 150°C. For colour stability, use as a glaze on top after baking.

Manufacturing Process

Step 1: Raw Material Qualification

Only high-quality plums from farms that are GAP-certified. More than 200 chemical residues were found in each batch, which meets EU MRL requirements.

Step 2: Enzymatic Extraction

A special mix of enzymes (cellulase and pectinase) improves the amount of anthocyanin produced by 35% compared to normal ways. At a fixed pH, the process takes 4 to 6 hours.

Step 3: Membrane Filtration

Cross-flow ultrafiltration gets rid of proteins and polysaccharides, making the sample more than 95% pure before it is concentrated.

Step 4: Spray Drying

160–180°C at the inlet and 80–90°C at the outlet. The nitrogen-blanketed device stops decomposition while the particles are being formed.

Step 5: Quality Control

  • Using HPLC to compare fingerprints to a standard
  • Tests for microbes according to USP <61>/<62>
  • Size distribution of particles (Malvern laser diffraction)

Step 6: Packaging

Inside FDA-approved fibre drums are triple-layer aluminium foil bags that block light and air.

Q: Why do certain plum powder vendors' batches vary in colour?

A: An uncontrolled raw material source and unpredictable drying temperatures. We use contracted farms and manage spray drying temperatures within ±2°C to ensure <5% colour variation.

Q: Do you think this powder can replace Allura Red?

A: In pH 3.0-5.5 systems. However, heat stability is poorer. For applications over 120°C, try our microencapsulated version (contact for specs).

Q: How do your normal and organic-certified powders differ?

A: USDA/EU organic plums and ethanol (versus. conventional). Same active content and particle size. Organic takes 15-20 days.
